2015/What did we eat yesterday? What will we eat tomorrow?

After having successively focused on the challenges of sustainable food, the supply of urban areas, and new modes of consumption, the Chair’s 4th international conference looks at the history and future of our food. We will first seek to understand what yesterday’s food practices and movements tell us by exploring our diet’s prehistoric origins, analysing famines in the Middle Ages and "culinary blending" in Latin America, and describing the history of a capital sin, gluttony. We then will consider what we can expect about tomorrow’s food in terms of new products, new uses, and technological innovations.
